



Pork Butcher Cut Print
An accurate 11-point pork cut chart Raymond made as a "sequel" to a beef cut chart that was featured in the magazine Real Simple. It was part of that issue's Fall BBQ guide, and this (and its cow partner) represents the most streamlined end of his work. In Raymond's words: sometimes it's best to say things with sparse type and careful forms instead of detail, detail, and detail.
